Acadêmicos do curso de Biomedicina da Uniarp participaram de
uma visita técnica à Vinícola Panceri de Tangará/SC. A atividade foi conduzida
pela professora Débora Raia e pelo coordenador do curso, professor Hiago
Bellaver, integrando a disciplina de Alimentos Funcionais e Suplementos.
A visita proporcionou aos acadêmicos uma compreensão do
processo de produção de vinhos, com foco especial na análise dos métodos de
produção e sua influência nos teores de antioxidantes, flavonoides e outros
compostos bioativos benéficos à saúde e ao bem-estar.
Durante a visita, os acadêmicos acompanharam as etapas do
processo de produção do vinho. Os professores destacaram a importância dos
métodos de extração e preparo das uvas, demonstrando como esses fatores
influenciam diretamente a concentração de compostos bioativos no vinho. Os
estudantes observaram na prática como a oscilação desses compostos pode variar
conforme os diferentes métodos de extração e preparo, influenciando
significativamente as características organolépticas do vinho e seus benefícios
para a saúde.
A experiência também incluiu uma discussão em campo sobre os
aspectos clínicos relacionados ao consumo de vinho. Foram abordadas as
indicações medicinais da bebida, especialmente no contexto de doenças
cardiovasculares e outras condições de saúde onde os antioxidantes e
flavonoides presentes na bebida podem desempenhar um papel terapêutico.
Os acadêmicos tiveram a oportunidade de comparar diferentes
técnicas de vinificação e observar como cada método impacta a qualidade e a
quantidade dos compostos bioativos presentes na bebida. A visita à Vinícola
proporcionou uma associação entre teoria e prática clínica, auxiliando
significativamente no aprendizado acadêmico.
